Our Apricot Chutney too has been reintroduced after 3 years. And again with low sugar. Sweet, spicy, tangy with a hint of pepper and something more.

No heat was applied to the apricots until the cooking stage (no mixie used to speed up the process). Apricots while being very sweet, turn tart with the application of heat. Having heat at only one stage of our entire process, helped us control the level of tarteness and as a result, the amount of sugar as well.
