A 3 ingredient recipe that goes back to the simple, basic, traditional way of making marmalade. Malta is juiced using a hand cranked juicer, the peels are hand cut. The juice is cooked along with the peels and the entire thing left to strain overnight. The next day, we add minimal sugar and cook it, bringing it all together.
A process that celebrates slow cooking, going back to the basics. A simple recipe that works only when we have the best of ingredients as we do with a particular variety of Malta sourced from one village.
